Easy chicken drumstick tray bake
This warming chicken drumstick tray bake is ready in just three easy steps. Speedy, simple and made with family-friendly ingredients, it’s the perfect weeknight dinner.
- 1kg Coles RSPCA Approved Australian Chicken Drumsticks
- 2 tsp Chinese five spice
- 2 large red onions, cut into wedges
- 1 bunch Chinese broccoli, trimmed, halved lengthways
- 2 x 250g pkts Coles Coconut Chilli Lime Microwave Rice
Preheat oven to 220°C. Use a large sharp knife to score the thickest part of the chicken drumsticks 2-3 times. Spray chicken with olive oil spray. Place chicken in a bowl with the five spice and toss to combine. Heat a flameproof roasting pan over medium heat. Add the chicken and cook, turning, for 2 mins or until golden brown. Transfer the pan to the oven and bake for 8 mins.
Add the onion to the chicken in the pan and spray with olive oil spray. Bake for a further 10 mins. Add broccoli and bake for 5 mins or until the chicken is cooked through and broccoli is just tender. Season.
Heat the rice following packet directions. Serve the chicken mixture with the rice.
