Easy chicken pho
Vietnamese pho is the new chicken soup and it is easy to make at home with the help of a few store bought ingredients.

Ingredients
- 4 cups (1L) Coles Vietnamese Inspired Chicken Pho Broth
- 1/2 Coles RSPCA Approved Hot Roast Chicken, skin and bones removed, meat shredded
- 440g pkt thin rice noodles
- 200g pkt Coles Australian Shredded Carrot
- 1 bunch buk choy, coarsely chopped
Method
STEP 1
Combine the pho broth and 2 cups (500ml) water in a large saucepan. Bring to the boil over high heat.
STEP 2
Add chicken, noodles, carrot and buk choy to the broth mixture. Cook for 2-3 mins or until the buk choy wilts and chicken is heated through.
STEP 3
Divide the pho mixture among serving bowls.
