Easy chicken tostadas

Ready in just 15 minutes, these crispy chicken tostadas are a tasty bite. Try them for an easy lunch or dinner.





  • 1 small red onion, thinly sliced
  • 1/4 cup (60ml) lime juice
  • 400g can black beans, rinsed, drained
  • 300g can corn kernels, rinsed, drained
  • 1 large avocado, stoned, peeled, chopped
  • 1/4 cup coriander leaves
  • 8 corn tortillas
  • 300g jar Coles Mexican Style Salsa
  • 2 cups (320g) shredded roast chicken breast



Combine the onion and 1 tbs lime juice in a small bowl. Set aside for 5 mins to soak. Place the beans, corn, avocado, coriander and remaining lime juice in a large bowl. Stir until well combined. Season well.


Meanwhile, heat grill on high. Line a baking tray with foil. Spray both sides of the tortillas with olive oil spray. Arrange half the tortillas on the lined tray. Cook under the grill for 2 mins each side or until crisp and toasted. Transfer to a clean work surface. Repeat with the remaining tortillas.


Drain the onion. Divide tortillas among serving plates. Spread with the salsa and top with the chicken, avocado mixture and onion.
