Cooking Club member Lyn Balfour’s crustless quiche is an easy twist on the classic. This simple but delicious quiche can be enjoyed hot or cold.

Easy crustless quiche

Ingredients

  • 2 tbs butter
  • 1 brown onion, finely chopped
  • 6 Coles Australian Free Range Eggs, lightly whisked
  • 3/4 cup (110g) self-raising flour
  • 1 cup (250ml) thickened cream
  • 1 cup (250ml) milk
  • 1 cup chopped ham
  • 1/2 red capsicum, seeded, chopped
  • 1/2 cup (60g) shredded tasty cheddar
  • 1 tsp wholegrain mustard
  • 1 tbs chopped flat-leaf parsley

Method

  1. Step 1

    Preheat oven to 180°C. Grease a 29cm pie dish. Melt butter in a frying pan over medium-high heat. Add the onion and cook, stirring, for 5 mins or until the onion softens. Transfer the onion to a bowl. Add egg, flour, cream, milk, ham or bacon, capsicum, cheddar, mustard and parsley. Stir until just combined.
  2. Step 2

    Pour egg mixture into the prepared dish and place on a baking tray. Bake for 30 mins or until filling is just set. Set aside for 5 mins to cool before serving.

    Serve with chopped flat-leaf parsley
