Easy lamb koftas

This tasty recipe is perfect for your next weeknight dinner. Ready in 30 minutes, these easy lamb koftas will keep the whole family happy.

Ingredients

  • 500g Coles Australian Lamb Mince
  • 2 tbs pistachio dukkah
  • 4 Coles Soft Wholemeal & Wholegrain Wraps, warmed
  • 200g tzatziki
  • 200g red Perino tomatoes, finely chopped
  • Pistachio dukkah, extra, to serve

Method

STEP 1

Place the mince and dukkah in a large bowl. Season and use your hands to mix until well combined. Divide the mixture evenly into 12 portions and roll into oval shapes. Insert a soaked bamboo skewer into each kofta.

STEP 2 

Spray a large non-stick frying pan with olive oil spray and place over medium heat. Cook the koftas, in 2 batches, turning often, for 6-8 mins or until golden brown and cooked through. Transfer to a plate and cover with foil. Set aside for 5 mins to rest.

STEP 3 

Place the wraps on serving plates. Top with tzatziki, koftas and tomato. Sprinkle with extra dukkah to serve.
