Recipe tip

COOK. STORE. SAVE.
Clever storage: Keep shaped, uncooked lamb kofta balls in the fridge for up to 24 hours. Store in a single layer in an airtight container. After shaping, uncooked lamb kofta balls can be frozen for up to 2 months. Freeze spaced out on a tray, then transfer to a sealable bag or airtight container. Defrost in the fridge, then cook according to the recipe. Cooked kofta can be frozen using the same method. Allow to cool, then freeze on a tray before transferring to a bag or airtight container.

Use it up: Pistachio dukkah is a wonderful addition to meat, seafood and vegetable dishes. Try it with lamb cutlets, salmon or in bubble and squeak.

Lamb koftas recipe

Kofta are delicious little balls of mince meat found throughout the Middle East, in Greece, the Balkans, India and other countries. Some cultures cook them like meatballs while in areas such as the Middle East, the meat patties are often cooked on skewers, forming kofta kebabs. The name kofta – sometimes also known as kefte, kefta and kofte – comes from a Persian word that means ground meat, or finely chopped meat, reflecting the traditional way kofta is prepared: with a mortar and pestle, or using a knife. These days, with minced meat available so easily, lamb koftas are a fast way to make a delicious meal. These easy lamb koftas call for only 2 ingredients – mince and pistachio dukkah (though you can use a spiced seed mix of your choice). Served with tzatziki, warmed wraps, and fresh tomatoes, a simple, delicious dinner is on the table in 30 minutes.

There are many tasty ways to serve lamb kofta

When deciding what to serve with lamb koftas, draw inspiration from the regions they originate from. Creamy dips like hommus and tzatziki are great choices as they add complementary fresh and earthy flavour to your meaty, spiced kofta. For something saucier, toum (Lebanese garlic sauce) is a punchy option that pairs beautifully with lamb. Flatbread or tortillas are another great addition and can be used to make lamb kofta wraps – simply spread your dip or sauce, add your koftas, and top with fresh greens and tomato. Kofta skewers and meatballs work wonderfully on platters or as part of a larger spread as well. Load up a serving tray with lamb kofta balls, salads like tabbouleh or fattoush, a variety of creamy condiments like chickpea and tomato loaded hommus, homemade tzatziki or olive dip, and fresh fruits like strawberries, pomegranate arils, or watermelon for bright colour and a sweet kick.
