Easy prawn minestrone with pesto
With a few shortcut ingredients, this prawn minestrone comes together in just 20 minutes. Drizzled with basil pesto, it’s a tasty dish for busy weeknights.
- 2 x 300g tubs Coles Kitchen Tomato & Basil Soup
- 2/3 cup (120g) macaroni
- 400g Coles Thawed Australian MSC Banana Prawns (from the deli), peeled leaving tails intact, deveined
- 1 cup (120g) Coles Snap Frozen Australian Vegetable Mix
- 1/2 x 190g jar Coles Basil Pesto
Combine the soup and 1 cup (250ml) water in a large saucepan over medium-high heat. Bring to the boil. Add the pasta and cook for 8 mins or until just tender.
Add the prawns and vegetables. Reduce heat to medium. Cook, stirring occasionally, for 3 mins or until the prawns curl and change colour and the vegetables are heated through.
Divide the soup among serving bowls. Spoon over the pesto to serve.
