Ingredients

  • 6 Old El Paso Regular Flour Tortillas, cut into pieces
  • 30g pkt Old El Paso Taco Spice Mix Extra Mild Super Tasty
  • 1 cup (120g) grated tasty cheddar
  • 425g can black beans, rinsed, drained
  • 1/3 cup (80g) drained pickled jalapeño slices
  • 1 avocado, stoned, peeled, thinly sliced
  • 2 tomatoes, chopped
  • 2 spring onions, thinly sliced

Method

  1. Step 1

    Preheat oven to 200°C. Place the tortilla pieces and spice mix in a large bowl. Spray with olive oil spray and toss to combine. Arrange tortilla pieces in a large baking dish and bake for 5 mins. Turn and bake for 5 mins or until light golden.
  2. Step 2

    Sprinkle with cheddar and bake for a further 8 mins or until cheddar is golden and melted. Top with beans, jalapeño, avocado, tomato, spring onion and coriander to serve.
