Fast falafel bowl
Looking to impress the family? Try this easy veggie bowl packed with falafel, hummus and roasted almonds for added crunch.
To make this Middle Eastern-style salad bowl, you’ll need a packet of falafel, a salad kit or slaw kit, fetta, roasted almonds and some hommus. This dish will be on the table in 15 minutes.
Start by preheating the oven to 180 degrees Celsius, then line a baking tray with baking paper. Arrange the falafel on the tray and pop in the oven for about 8 minutes or until heated through. Meanwhile, prepare the salad kit in a large bowl, without adding the dressing, then coarsely chop the almonds.
Divide the salad and falafel among bowls. Drizzle with the dressing from the salad kit and sprinkle with fetta. Spoon the hummus among small serving bowls. Sprinkle with almonds.
- 225g pkt falafel balls
- 350g pkt Mediterranean-style salad kit or 350g pkt kaleslaw kit
- 200g tub hommus
- 80g fetta, crumbled
- 1/4 cup (40g) dry roasted almonds, coarsely chopped
Preheat oven to 180°C. Line a baking tray with baking paper. Arrange falafels on the lined tray. Bake for 8 mins or until heated through.
Meanwhile, prepare the salad kit in a large bowl following packet directions, reserving the dressing. Divide the hommus among small serving bowls.
Divide the salad, falafel and hommus among serving bowls. Drizzle with the reserved dressing. Sprinkle with fetta and almonds.
