Heat half the oil in a wok or large frying pan over high heat. Add one-third of the pork and stir-fry for 1-2 mins or until golden brown.
Transfer to a bowl. Repeat, in 2 more batches, with the remaining pork.
Heat the remaining oil in the wok or pan. Add the onion and combined capsicum and stir-fry for 2 mins or until just tender. Return the pork to the wok or pan with the pineapple and sweet and sour sauce. Stir-fry for 2-3 mins or until heated through. Add half the coriander and toss to combine.
Meanwhile, heat the rice following packet directions.
Divide the rice and pork mixture among serving bowls and sprinkle with remaining coriander. Serve immediately.
