Garlic mushroom mince and prawn pizza cut into wedges

Ingredients

  • 2 large wholemeal pizza bases
  • 2 tbs olive oil
  • 500g pkt Coles Australian Mushroom Mince
  • 3 garlic cloves, crushed
  • 1 red onion, thinly sliced
  • 500g raw prawns, peeled leaving tails intact, deveined
  • 100g Perino tomatoes, sliced
  • 100g fetta, crumbled
  • 1 cup (100g) shredded pizza cheese
  • Basil leaves, to serve
  • Extra virgin olive oil, to drizzle
  • Mixed salad leaves, to serve

Method

  1. Step 1

    Preheat oven to 200˚C. Line 2 baking trays with baking paper. Place pizza bases on the prepared trays.
  2. Step 2

    Heat the olive oil in a large frying pan over medium-high heat. Cook the mushroom mince and garlic, stirring, for 8 mins or until pan juices have evaporated. Set aside to cool.
  3. Step 3

    Spread the mushroom mince mixture evenly over the pizza bases. Top with the onion, prawns, tomato, fetta and pizza cheese. Bake the pizzas for 20 mins or until the prawns curl and change colour and the pizza bases are crisp and golden.
  4. Step 4

    Cut pizzas into slices. Top with basil and drizzle with extra virgin olive oil. Serve with salad leaves.
