Golden Gaytime semifreddo

We’ve turned the classic Aussie ice cream into a cake. This Golden Gaytime semifreddo is the perfect summer treat.

Ingredients

  • 300ml thickened cream
  • 2 eggs
  • 4 egg yolks
  • 1/3 cup brown sugar
  • 1 tsp vanilla bean paste
  • 1 tsp ground cinnamon
  • 8 Golden Gaytimes, sticks removed, plus 3 extra chopped, to serve
  • Honey, to serve

Method

STEP 1

Grease a 7cm-deep, 9cm x 25.5cm (base measurement) loaf pan and line with baking paper, allowing the paper to extend 6cm over the long sides of the pan.

STEP 2

Using an electric mixer, beat the cream until soft peaks form. Transfer to a bowl. Set aside.

STEP 3

Using a clean electric mixer, beat the eggs, egg yolks, sugar, vanilla and cinnamon on high speed for 6-7 mins or until thick and pale. Fold in the whipped cream.

STEP 4

Line the base of the prepared pan with half the Golden Gaytimes. Pour cream mixture into the prepared pan. Top with the remaining Golden Gaytimes. Freeze overnight.

STEP 5

Stand the semifreddo at room temperature for 2 mins. Turn out onto a serving plate. Top with extra Golden Gaytimes and drizzle with honey. Serve immediately.
