Ingredients

  • 1/4 avocado, peeled, mashed
  • 1 tsp lemon juice
  • 2 slices bread
  • 1/2 Lebanese cucumber, thinly sliced
  • 1 iceberg lettuce leaf, shredded or spinach or rocket or mixed leaves
  • 80g shredded roast chicken breast or turkey or leftover sliced ham
  • 1/4 cup alfalfa sprouts or any sprouts
  • 1 tbs mayonnaise or aioli

Method

  1. Step 1

    Combine the avocado and lemon juice in a small bowl.
  2. Step 2

    Spread 1 slice of bread with the avocado mixture. Top with the cucumber, lettuce or other salad leaves, chicken or turkey or ham, sprouts, mayonnaise or aioli and remaining bread. Cut in half.
