Grilled corn with fetta and Mexican spice

Ingredients

  • 50g butter, softened
  • 2 tsp Mexican Chilli Spice Blend
  • 1 garlic clove, crushed
  • 1 lime, zested, juiced
  • 6 corn cobs
  • 70g fetta, crumbled
  • 2 tbs chopped coriander
  • Lime wedges, to serve

Method

  1. Step 1

    Combine the butter, spice blend, garlic and lime zest in a small bowl.
  2. Step 2

    Fold corn husks back to expose the kernels and trim to shorten. Tie with kitchen string and remove the silk. Heat a barbecue grill or chargrill on high. Cook corn on the grill, turning, for 12-14 mins or until tender and lightly charred. Brush corn with butter mixture and transfer to a serving platter.
  3. Step 3

    Drizzle corn with lime juice and sprinkle with fetta and coriander. Season with pepper and serve with lime wedges.
