Hash brown potato bake

Ingredients

  • 8 hash browns, thawed, thickly sliced
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup (120g) grated tasty cheddar
  • 2 tsp olive oil
  • 1 brown onion, finely chopped
  • 3 bacon rashers, finely chopped
  • 1/2 red capsicum, seeded, finely chopped
  • 1 cup (240g) sour cream
  • Coarsely chopped flat-leaf parsley, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Lightly grease a 6-cup (1.5L) baking dish. Place hash brown, cayenne pepper, if using, and half the cheddar in a heatproof bowl. Season and toss to combine.
  2. Step 2

    Heat the oil in a large frying pan over medium heat. Add the onion, bacon and capsicum and cook, stirring, for 4 mins or until the onion softens and the bacon is light golden.
  3. Step 3

    Add the onion mixture to the hash brown mixture in the bowl and gently stir to combine. Gently stir in the sour cream. Spoon into the prepared dish and sprinkle with remaining cheddar.
  4. Step 4

    Bake for 25-30 mins or until the cheddar is bubbling and golden brown.
  5. Step 5

    Season with pepper and sprinkle with parsley to serve.
