For a fuss-free meal, you can’t go past this tray bake. It’s got tender, sticky pork, golden potatoes and crisp baby broccoli.

Ingredients

  • 750g Coles Australian Pork Fillet
  • 2 tbs hoisin sauce
  • 12 baby white potatoes, halved
  • 1 garlic bulb, halved
  • 1 tbs olive oil
  • 1 bunch baby broccoli
  • 60g baby spinach leaves
  • Hoisin sauce, extra, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Line a large baking tray with baking paper. Combine the pork and hoisin sauce in a bowl. Cover and place in the fridge until needed.
  2. Step 2

    Add the potato, garlic and oil to a medium bowl. Toss to combine. Arrange on the lined tray and bake for 30 mins.
  3. Step 3

    Add pork to the tray and bake for a further 30 mins or until pork is just cooked through and the potato is tender, adding the baby broccoli for the last 5 mins of cooking time.
  4. Step 4

    Add spinach to the tray and toss to combine. Season. Slice the pork and drizzle with extra hoisin sauce to serve.
