Ingredients

  • 4 Coles Traditional Fruit Hot Cross Buns
  • 2 Coles Australian Free Range Eggs
  • 1 cup (250ml) milk
  • 1 tbs caster sugar
  • 20g butter
  • 8 middle bacon rashers
  • 1/4 cup (60ml) maple syrup
  • Peanut butter, to serve

Method

  1. Step 1

    Use a small serrated knife to cut each bun crossways into 3 even slices.
  2. Step 2

    Whisk the eggs, milk and sugar in a large shallow bowl. Melt the butter in a large frying pan over medium heat. Dip half the bun slices in egg mixture and turn to coat. Transfer to the frying pan and cook for 2 mins each side or until golden brown and cooked through. Transfer to a plate and cover with foil to keep warm. Repeat with the remaining bun slices and remaining egg mixture.
  3. Step 3

    Cook the bacon in the pan for 2-3 mins each side or until golden brown and crisp. Drizzle the maple syrup over the bacon and turn to coat.
  4. Step 4

    Divide the bun slices among serving plates and top with the peanut butter or almond butter. Serve with the maple bacon.

    Serve with thyme sprigs.
