Igloo cake

It just takes a few tricks to make this impressive igloo cake. Get the kids involved in the decorating for a fun holiday activity.

Ingredients

  • 2 x 470g pkts Green’s Moist Vanilla Cake baking mix
  • 4 Coles Australian Free Range Eggs
  • 1 1/3 cups (300ml) milk
  • 120g butter, softened
  • 250g butter, extra, softened
  • 500g icing sugar mixture
  • 1 tbs milk, extra
  • Blue food colouring, to decorate
  • 290g Coles White Chocolate Baking Chips, melted
  • Coles Bake & Create White Icing and Black Icing, to decorate
  • Coles White Chocolate Baking Chips, extra, melted
  • Snowflake sprinkles, to decorate
  • Vanilla meringue kisses, crushed, to serve

Method

STEP 1 

Preheat oven to 180°C. Prepare cakes using baking mix, eggs, milk and butter following packet directions (reserve the icing for another use). Set aside to cool.

STEP 2

Use an electric mixer to beat extra butter in a bowl until very pale. Gradually add the icing sugar mixture, beating well to combine. Add extra milk and a little blue food colouring and beat to combine. Trim the tops of the cakes to level. Place 1 cake on a serving plate. Spread top and side with half the buttercream. Top with the remaining cake and spread with the remaining buttercream.

STEP 3

Line a baking tray with baking paper. Spread half the chocolate over the lined tray. Tint the remaining chocolate with a little food colouring. Inflate a balloon to 15cm diameter. Spray the top with canola oil spray and rub into the balloon. Dip top of the balloon in the blue chocolate and place, chocolate-side up, in a teacup to set.

STEP 4

Meanwhile, use the white and black icing to make polar bears.

STEP 5

Carefully deflate the balloon and peel away from the chocolate dome. Break up white chocolate and attach to the outside of the dome with extra melted chocolate. Arrange on cake with the bears. Decorate with sprinkles and meringue to serve.
