Italian-style lamb salad

With only 5 ingredients needed, this simple lamb salad is so easy to do.

Ingredients

  • 3 roma tomatoes, quartered
  • 2 tbs olive oil
  • 4 Coles Australian Lamb Leg Steaks
  • 220g pkt Coles Kitchen Italian Style Leaf Blend
  • 1/2 cup (125ml) balsamic dressing

Method

STEP 1

Preheat oven to 220°C. Arrange the tomato on a baking tray. Drizzle with half the oil and season. Roast for 15 mins or until the tomato starts to collapse.

STEP 2

Meanwhile, heat a barbecue grill or chargrill on medium-high. Brush the steaks with the remaining oil and season. Cook for 3 mins each side for medium-rare or until cooked to your liking. Transfer to a plate and cover loosely with foil. Set aside for 5 mins to rest. Thickly slice.

STEP 3

Arrange the salad leaves on a serving platter with the tomato and steak. Drizzle with the dressing to serve.
