Japanese-style pork and soba noodle stir-fry
This mouth-watering stir-fry is a midweek must. Made with delicious pork, soba noodles and veggies, it ticks all the boxes.

Ingredients
- 270g soba noodles
- 2 tbs vegetable oil
- 500g Coles Australian Pork Sirloin Steaks, trimmed, thinly sliced
- 1 brown onion, thinly sliced
- 1 garlic clove, crushed
- 1 tsp finely grated ginger
- 1/4 cup (60ml) teriyaki marinade
- 2 tbs soy sauce
- 1 tbs rice wine vinegar
- 350g pkt Coles Australian Superfood Vegetable Mix
Method
STEP 1
Cook the noodles in a large saucepan of boiling water following packet directions or until just tender. Refresh under cold water. Drain well.
STEP 2
Meanwhile, heat half the oil in a wok or large deep frying pan over medium-high heat. Stir-fry the pork, in 2 batches, for 3-4 mins or until just cooked through. Transfer to a plate.
STEP 3
Heat the remaining oil in the wok or pan over medium-high heat. Add the onion and stir-fry for 2-3 mins or until the onion softens. Add the garlic and ginger and stir-fry for 1 min.
STEP 4
Add teriyaki marinade, soy sauce and vinegar to wok or pan. Stir-fry for 1 min. Add vegetable mix. Stir-fry for 1 min or until heated through. Return pork to wok or pan with noodles. Toss for 1-2 mins or until combined and heated through.
