Spaghetti bolognese topped with mince mixture

Ingredients

  • 300g spaghetti
  • 500g Coles Australian Pork Mince
  • 1 red capsicum (150g), seeded, finely chopped
  • 330g jar tomato pasta sauce with chilli
  • 1/4 cup (20g) Coles Shredded Parmesan

Method

  1. Step 1

    Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain, reserving ½ cup (125ml) of the cooking liquid. Return the pasta to the pan with the cooking liquid.
  2. Step 2

    Meanwhile, heat a non-stick frying pan over medium heat. Add the mince and cook, stirring with a wooden spoon to break up lumps, for 3 mins or until the mince changes colour.
  3. Step 3

    Add the capsicum to the mince in the pan. Cook, stirring, for 1 min or until well combined. Add the pasta sauce. Reduce heat to low and cook for 5 mins or until the sauce thickens slightly.
  4. Step 4

    Divide the pasta among serving bowls. Top with mince mixture. Sprinkle with parmesan.
