Korean-style fried rice

This delicious fried rice recipe is loaded with beef and veggies. With only 5 ingredients and 20 minutes needed, it’s a weeknight winner.

Ingredients

  • 500g pkt Cook with Curtis Korean Recipe Beef Mince
  • 400g pkt Coles Kitchen Ready to Stir-Fry Family Mix
  • 3 cups cooked brown rice, cooled
  • 180g kimchi, chopped
  • 4 Coles Australian Free Range Eggs

Method

STEP 1

Place a greased wok or large frying pan over medium-high heat. Add the mince and cook, stirring to break up lumps, for 5 mins or until mince changes colour. Add the stir-fry mix and cook, stirring, for 2-3 mins. Add the rice and kimchi. Cook, stirring, for 2 mins or until heated through.

STEP 2

Meanwhile, heat a large non-stick frying pan over medium-high heat. Crack eggs into the pan and cook until egg whites are set.

STEP 3

Divide the rice mixture evenly among serving bowls. Season. Top with the fried eggs. Serve immediately.
