Korma chicken and vegetable medley tray bake
One tray, 5 ingredients and 25 minutes is all you need for this delicious korma chicken and vegetable tray bake. Plus, there’s barely any washing up!
- 500g Coles RSPCA Approved Australian Chicken Tenderloins
- 1/2 cup (150g) korma curry paste
- 750g pkt Coles Kitchen Australian Family Veggie Medley
- 1/3 cup coriander leaves
- 200g tzatziki dip
Preheat oven to 200˚C. Line a large baking tray with baking paper. Place the chicken in a bowl. Add half the curry paste and toss to coat. Arrange on the prepared tray. Bake for 15 mins.
Meanwhile, place the vegetables in a large heatproof bowl. Pour over enough boiling water to cover. Drain well. Transfer to a large bowl. Add the remaining curry paste and toss to coat.
Arrange vegetables around the chicken on the tray. Bake for 5 mins or until the chicken is cooked through and the vegetables are just tender. Season. Sprinkle with coriander and serve with tzatziki.
