Lamington ice cream pudding
Try this simple twist on an all-time favourite dessert. It’s easy to make and perfect for any celebration.
Note: + 6 hours freezing time
- 2L Coles Vanilla Ice Cream, softened
- 4 Coles Lamington Fingers, chopped
- Dark chocolate, melted, to serve
- Raspberries, to serve
- Strawberries, to serve
- Coconut flakes, to serve
Line a pudding basin with plastic wrap. Place the ice cream in a large bowl. Add the lamington and fold to combine. Spoon into the prepared pudding basin and smooth the surface. Cover with plastic wrap and freeze for 6 hours or overnight or until firm.
Turn ice cream pudding onto a serving plate. Drizzle with chocolate and decorate with raspberries and strawberries. Sprinkle with coconut flakes and serve immediately.
