Layered fruit ‘cake’
Layered with pineapple, berries and watermelon, this fruit ‘cake’ is the perfect warm-weather snack, dessert or afternoon treat.
- 2 thick slices pineapple, peeled
- Mixed berries, to serve
- 2 thick slices watermelon, peeled
- Coconut yoghurt, to serve
- Mixed berries, extra, to serve
- Honey, to serve
Place 1 slice of pineapple on a serving platter. Top with mixed berries and 1 slice of watermelon. Continue layering, finishing with watermelon.
Top the watermelon with coconut yoghurt and extra mixed berries. Drizzle with honey to serve.
