Thress cups of layered graveyard taco dips with writing icing tombstones

Ingredients

  • 3 spinach wraps
  • 2 wholemeal wraps
  • 2 white wraps
  • 1 cup (160g) frozen corn kernels
  • 400g can black beans, rinsed, drained
  • 3 avocados, stoned, peeled, mashed
  • 1 tbs taco seasoning
  • 1 tbs lime juice
  • 200g cherry tomatoes, chopped
  • 1/2 red onion, chopped
  • 2 spring onions, thinly sliced
  • Black writing icing, to decorate

Method

  1. Step 1

    Preheat oven to 180°C. Use kitchen scissors to cut tree shapes from the spinach wraps. Cut tombstone shapes from the wholemeal and white wraps. Place trees and tombstones on baking trays. Bake, turning occasionally, for 8-10 mins or until light golden and just crisp. Set aside on the trays to cool.
  2. Step 2

    Meanwhile, cook the corn in a small saucepan of boiling water for 2 mins. Refresh under cold water. Drain well. Place in a bowl with the black beans. Use a fork to coarsely mash. Spoon evenly among serving glasses.
  3. Step 3

    Combine the avocado, taco seasoning and lime juice in a bowl. Spoon over the corn mixture. Combine the tomato, onion and spring onion in a small bowl. Sprinkle over the avocado mixture in the glasses.
  4. Step 4

    Use black writing icing to decorate the tombstones. Arrange the trees and tombstones in the glasses.
