Lime and passionfruit curd

You only need 6 ingredients to make this delicious lime and passionfruit curd. Add it to desserts, or enjoy it on toast.

2 cups (500ml)


Note: + 1 hour chilling time



  • 2 Coles Australian Free Range Eggs, lightly whisked
  • 100g butter, chopped
  • 1 cup (220g) caster sugar
  • 2 tsp finely grated lime rind
  • 1/4 cup (60ml) lime juice
  • 1/4 cup (60ml) passionfruit pulp



Strain the egg through a fine sieve into a bowl. Discard solids. Combine the butter, sugar, egg, lime rind, lime juice and passionfruit pulp in a small saucepan over medium heat. Cook, stirring constantly, for 2 mins or until butter melts. Bring to a simmer. Cook, stirring, for 5 mins or until the mixture thickens.


Transfer to a heatproof bowl. Cover with plastic wrap and place in the fridge for 1 hour to chill.
