Ingredients

  • 200g mixed berries
  • 2 tbs maple syrup
  • 1/2 tsp vanilla bean paste
  • 80g light cream cheese
  • 2 tsp icing sugar mixture
  • 1/4 tsp ground cinnamon
  • 2 spicy fruit English muffins, split
  • Lime zest, to serve

Method

  1. Step 1

    Toss the berries in a small bowl with the maple syrup and vanilla. Set aside for 5 mins to develop the flavours.
  2. Step 2

    Combine the cream cheese, icing sugar and cinnamon in a small bowl. Toast the muffins and place on serving plates. Spread with the cream cheese mixture and top with the berry mixture. Sprinkle with the lime zest.
