Mango, pineapple and coconut daiquiri

Ingredients

  • 2 mangoes, stoned, peeled, chopped
  • 1 cup (250ml) chilled pineapple juice
  • 2/3 cup (160ml) white coconut rum or extra pineapple juice
  • 1/2 cup (125ml) Coles Coconut Milk
  • 1 tbs lime juice
  • 1 tbs chopped palm-flavoured sugar
  • Crushed ice, to serve

Method

STEP 1

Line a baking tray with baking paper. Arrange mango on the lined tray. Place in the freezer for 1 hour or until frozen.

STEP 2

Place mango, pineapple juice, rum or extra pineapple juice, coconut milk, lime juice and sugar in a blender with ice. Blend until smooth. Serve immediately.

Serve with sliced mango and lime zest
