Ingredients

  • 8 Coles Australian Made Bacon Rashers
  • 2 tbs maple syrup
  • 4 Coles Australian Free Range Eggs
  • 4 English muffins, split, toasted
  • 60g pkt Coles Australian Baby Spinach
  • HP Sauce, to serve

Method

  1. Step 1

    Heat a large frying pan over medium-high heat. Add the bacon and cook, turning, for 2-3 mins or until golden brown. Drizzle with the maple syrup and turn to coat. Transfer to a plate.
  2. Step 2

    Wipe the pan clean with paper towel. Spray with olive oil spray. Crack eggs into the pan and cook for 4-5 mins or until white is set and yolk is still runny*.
  3. Step 3

    Divide muffins among serving plates. Top with bacon, egg and spinach. Season with pepper. Serve with HP Sauce or barbecue sauce.

    *A runny yolk is considered to be a raw egg. We recommend that pregnant women, young children, the elderly and people with compromised immune systems do not consume raw egg.
