Maple-poached mandarins

Ingredients

  • 2 mandarins, zested, segmented
  • 2 tbs maple syrup
  • 1 tsp vanilla bean paste
  • 1/4 tsp ground cinnamon
  • 2 whole star anise
  • Coles Original Porridge, prepared following packet directions, to serve
  • Ground cinnamon, extra, to serve
  • Maple syrup, extra, to serve

Method

  1. Step 1

    Place the mandarin in a saucepan over medium heat. Add the maple syrup, vanilla, cinnamon, star anise and 2 tbs water and bring to a simmer. Cook for 5 mins or until mixture thickens slightly.
  2. Step 2

    Spoon mandarin mixture over porridge. Sprinkle with extra ground cinnamon and drizzle with extra maple syrup to serve.
