  • 1 tbs caster sugar
  • 1 lime wedge
  • 1/4 cup (60ml) tequila
  • 1/4 cup (60ml) triple sec or Cointreau
  • 2 tbs lime juice
  • 6 sugar cubes
  • 750ml bottle chilled champagne

Method

  1. Step 1

    Place caster sugar on a small plate. Run the lime wedge around the rims of 6 serving glasses. Dip in sugar to coat.
  2. Step 2

    Combine the tequila, triple sec or Cointreau and lime juice in a small jug. Place sugar cubes on a small plate. Drizzle with a little tequila mixture. Pour remaining tequila mixture evenly among glasses. Top with champagne.
  3. Step 3

    Drop a sugar cube into each glass just before serving.
