Massaman curry paste
Packed with herbs and spices, this Massaman curry paste is a kitchen essential.
- 1/4 cup (35g) roasted peanuts
- 1 bunch coriander, roots and stems only, chopped
- 2 shallots, chopped
- 1 garlic clove, chopped
- 2 long red chillies, seeded, chopped
- 1 tbs finely grated ginger
- 1 lemongrass stem, pale section only, chopped, or 1 tbs lemongrass paste
- 1 1/2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
Place peanuts, chopped coriander, shallot, garlic, chilli, ginger, lemongrass, cumin, ground coriander, cinnamon, cardamom, cloves, nutmeg and 2 tbs water in a food processor.
Process until the mixture is smooth and well combined.
