Classic fried rice gets a Mediterranean-style twist. Complete with tzatziki and salami, this fried rice is a tasty weeknight dinner.

Ingredients

  • 1 cup (120g) frozen baby peas
  • 200g gluten-free salami slices, chopped
  • 2 x 250g pkts microwavable brown, red and wild rice
  • 200g antipasto mix, drained
  • 200g tzatziki dip

Method

  1. Step 1

    Place the peas in a heatproof bowl and cover with boiling water. Stand for 2 mins or until tender. Drain well.
  2. Step 2

    Heat a large non-stick frying pan over medium-high heat. Cook salami, stirring, for 3 mins or until crisp. Transfer to a plate lined with paper towel. Add the peas and rice to the pan. Cook, stirring, for 3 mins or until heated through. Add the salami and antipasto mix. Cook, tossing, for 2 mins or until well combined and heated through.
  3. Step 3

    Transfer the rice mixture to a serving platter. Top with dip to serve.
