Mexican-style tiger prawn lettuce cups

Filled with avocado and Australian tiger prawns, these Mexican-style lettuce cups are a crisp and delicious bite.

Ingredients

  • 2 large ripe tomatoes, seeded, finely chopped
  • 1 small red onion, finely chopped
  • 1 jalapeño chilli, finely chopped (optional)
  • 2 limes, juiced
  • 1 cup finely chopped coriander
  • 2 avocados, stoned, peeled
  • 1kg Coles Deli Large Thawed Australian Cooked Tiger Prawns, peeled leaving tails intact, deveined
  • 2 baby cos lettuce, leaves separated
  • 1 jalapeño chilli, extra, sliced (optional)

Method

STEP 1

Combine the tomato, onion, chopped chilli, if using, half the lime juice and half the chopped coriander in a bowl.

STEP 2

Place the avocado in a separate bowl. Use a fork to mash until almost smooth. Stir in the remaining lime juice and remaining chopped coriander.

STEP 3

Cut half the prawns into 1cm pieces, discarding the tails. Arrange the lettuce on a serving platter. Fill the lettuce with the avocado mixture, tomato mixture and chopped prawns. Arrange the whole prawns on top. Sprinkle with sliced chilli, if using.

Tip

For an extra hit of flavour, sprinkle the lettuce cups with coriander leaves and serve with lime wedges
