Mini blueberry friands

Quick, easy and really tasty, these tiny baked treats are made from a mix of almond meal and blueberries. Ready in less than 30 minutes.

Ingredients

  • ¾ cup (120g) icing sugar mixture
  • ½ cup (60g) almond meal
  • ¼ cup (35g) plain flour
  • 90g butter, melted
  • 3 Coles Australian Free Range Egg whites
  • ¼ cup fresh or frozen blueberries

Method

STEP 1

Preheat oven to 180°C. Grease 18 holes of two 1½-tbs (30ml) mini muffin pans.

STEP 2

Combine icing sugar, almond meal and flour in a bowl. Add butter and egg whites. Stir to combine. Spoon into the prepared pans. Top with blueberries.

STEP 3

Bake for 15 mins or until the friands are light golden and cooked through. Transfer the friands to a wire rack to cool completely. Store in an airtight container at room temperature for up to 3 days.
