Mini chicken skewers

These mini chicken skewers are great for entertaining. With Moroccan spices and veggies, they're easy and delicious.

Ingredients

  • 600g Coles RSPCA Approved Australian Chicken Thigh Fillets, cut into 2cm pieces
  • 1 yellow capsicum, seeded, cut into 2cm pieces
  • 1 red capsicum, seeded, cut into 2cm pieces
  • 1 zucchini, thinly sliced crossways
  • 1 tbs Moroccan seasoning
  • 1 tbs olive oil

Method

STEP 1

Combine the chicken, combined capsicum, zucchini, Moroccan seasoning and oil in a bowl. Thread evenly onto 12 small soaked bamboo skewers.

STEP 2

Heat a barbecue grill or chargrill on medium. Cook the skewers, turning, for 10 mins or until the chicken is cooked through. Set aside for 5 mins to rest.

STEP 3

Transfer to a serving plate to serve.
