Mint limeade

Ingredients

  • 1 cup (250ml) fresh lime juice
  • 1/2 tsp finely grated lime rind
  • 1 cup (220g) white sugar
  • 3 mint sprigs
  • 2 tsp elderflower and rose cordial
  • 1.5L chilled soda water
  • Crushed ice, to serve
  • Lime slices, to serve
  • Mint leaves, to serve

Method

  1. Step 1

    Combine lime juice, lime rind, sugar and 1 cup (250ml) water in a saucepan over low heat. Cook, stirring, for 5 mins or until sugar dissolves. Strain through a fine sieve into a large heatproof jug and place in fridge for 2 hours to chill.
  2. Step 2

    Add the mint and cordial to the lime mixture. Top up with soda water. Serve with ice, lime slices and mint leaves.
