Note: + cooling time
- 1 bunch mint, leaves picked, finely chopped
- 1 tbs raw sugar
- 1/4 cup (60ml) malt vinegar or apple cider vinegar
- 3/4 cup (185ml) boiling water
Combine the mint, sugar and vinegar in a heatproof bowl. Add the boiling water and stir until the sugar dissolves. Set aside to cool completely. Season to taste.
