Mixed vegetable bolognese

Ingredients

  • 2 tsp olive oil
  • 1 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 1/2 cup (70g) Scoop & Weigh Plant-Based Spaghetti Bolognese Mince Mix
  • 1 1/2 cups (375ml) boiling water
  • 1 medium zucchini, coarsely grated
  • 350g Kent pumpkin, peeled, grated
  • 1 cup (120g) frozen peas
  • 375g penne
  • Basil leaves, to serve

Method

STEP 1

Heat the oil in a large frying pan over medium-high heat. Add the onion and cook, stirring, for 3 mins or until onion softens. Add the garlic and cook, stirring, for 30 secs or until aromatic.

STEP 2

Stir in the bolognese mince mix, water, zucchini and pumpkin. Cook, stirring occasionally, for 10-15 mins or until the vegetables soften and the sauce thickens. Stir in the peas and cook, stirring, for 2 mins or until heated through.

STEP 3

Meanwhile, cook the pasta in a large saucepan of boiling water following packet directions or al dente. Drain.

STEP 4

Add the pasta to the sauce in the pan and stir to combine. Sprinkle with basil to serve.
