Mocha buttercream muffins

Ready in 10 minutes, these no-bake mocha buttercream muffins are so quick and easy to do. With a few shortcut ingredients, you can whip up a batch for your next special occasion.

Ingredients

  • 125g butter, softened
  • 2 1/4 cups (360g) icing sugar mixture
  • 2 tbs brewed Daley St Dark Roast Ground Coffee, cooled
  • 2 tbs cocoa powder
  • Coles Mini Double Chocolate Muffins 315g (9 pack)
  • Coles Bake & Create Mini Hearts Sprinkles, to decorate

Method

STEP 1 

Use an electric mixer to beat butter in a bowl until pale. Gradually add icing sugar, in batches, beating well after each addition. Beat in the coffee and cocoa powder. Transfer buttercream to a piping bag fitted with a 1cm fluted nozzle. 

STEP 2 

Pipe buttercream onto muffins and decorate with sprinkles.
