Mocha buttercream muffins
Ready in 10 minutes, these no-bake mocha buttercream muffins are so quick and easy to do. With a few shortcut ingredients, you can whip up a batch for your next special occasion.
- 125g butter, softened
- 2 1/4 cups (360g) icing sugar mixture
- 2 tbs brewed Daley St Dark Roast Ground Coffee, cooled
- 2 tbs cocoa powder
- Coles Mini Double Chocolate Muffins 315g (9 pack)
- Coles Bake & Create Mini Hearts Sprinkles, to decorate
Use an electric mixer to beat butter in a bowl until pale. Gradually add icing sugar, in batches, beating well after each addition. Beat in the coffee and cocoa powder. Transfer buttercream to a piping bag fitted with a 1cm fluted nozzle.
Pipe buttercream onto muffins and decorate with sprinkles.
