Ingredients

  • 4 Coles Australian Pork Forequarter Cutlets
  • 1 tbs Moroccan spice mix
  • 2 x 350g tubs Coles Kitchen Crème Royale Mashed Potato
  • 1/3 cup (25g) Coles Shredded Parmesan Cheese
  • 120g pkt Coles Australian Baby Rocket

Method

  1. Step 1

    Place pork cutlets in a large bowl with the spice mix and turn to coat. Spray a large frying pan with olive oil spray and place over medium-high heat. Cook the pork for 2-3 mins each side or until golden brown and cooked through. Transfer to a plate.
  2. Step 2

    Meanwhile, heat the mashed potato following packet directions. Transfer to a medium heatproof bowl. Add 2 tbs parmesan and gently stir to combine. Season well.
  3. Step 3

    Divide the potato mixture, rocket and pork cutlets among serving plates. Drizzle with the pan juices and sprinkle with the remaining parmesan to serve.
