  • 8 portobello mushrooms, stems trimmed
  • 1 1/3 cups (320g) tomato passata
  • 1 1/2 cups (180g) shredded pizza cheese
  • 80g mixed salad leaves
  • 2 tbs balsamic dressing

Method

  1. Step 1

    Preheat grill on high. Line a large baking tray with foil. Place mushrooms, stem-side down, on the lined tray. Spray with olive oil spray. Cook under the grill for 5 mins. Turn mushrooms over and spoon passata evenly over the mushrooms. Sprinkle with cheese. Cook under the grill for 5 mins or until the cheese melts.
  2. Step 2

    Divide the salad leaves among serving plates. Drizzle with dressing. Add the mushrooms and season to serve.
