One-pan Italian style pork cutlets

Ingredients

  • 4 (about 500g) Coles Australian Pork Loin Cutlets*
  • 500g pkt Coles Kitchen Vegetable Soup Kit
  • 2 x 400g cans diced tomatoes
  • 400g can four bean mix, rinsed, drained
  • 1/2 cup basil leaves

Method

STEP 1

Spray a large deep frying pan with olive oil spray and place over high heat. Add the pork and cook for 3 mins each side or until browned. Transfer to a plate.

STEP 2

Add vegetables from the soup kit (reserve stock sachet for another use) to the pan. Cook, stirring, for 5 mins or until the vegetables are just tender. Add the tomato and beans and stir to combine. Bring to the boil. Reduce heat to low. Cover and cook for 5 mins or until the vegetables are tender.

STEP 3

Return the pork to the pan and cook for 10-12 mins or until the pork is cooked through. Sprinkle with basil and season with pepper to serve.

*If unavailable, use Coles Australian Pork Loin Chops.
