Oysters with cucumber and lime granita

Ingredients
- 1 Lebanese cucumber, coarsely chopped
- 1 lime, rind finely grated, juiced
- 1 tsp finely grated ginger
- 1 tsp caster sugar
- 1 tsp fish sauce
- Rock salt, to serve
- 24 fresh oysters
- 2 Coles Australian Qukes Baby Cucumbers, peeled into ribbons
Method
STEP 1
Place chopped cucumber, lime rind, lime juice, ginger, sugar and fish sauce in a blender. Blend until smooth. Pour into a shallow metal container. Cover with foil. Freeze for 2 hours or until frozen. Use a metal spoon to break up cucumber mixture and place in a food processor. Process until finely crushed.
STEP 2
Arrange rock salt on a serving platter. Top with the oysters. Spoon cucumber mixture over the oysters. Top with cucumber ribbons. Serve immediately.
Serve with Lime wedges, spring onion curls and thinly sliced red chilli
Non-slip tip: Not only does rock salt look great on a seafood platter, it also helps to hold the oyster shells in place so they don't slide around.
