Oysters with cucumber and lime granita

Ingredients

  • 1 Lebanese cucumber, coarsely chopped
  • 1 lime, rind finely grated, juiced
  • 1 tsp finely grated ginger
  • 1 tsp caster sugar
  • 1 tsp fish sauce
  • Rock salt, to serve
  • 24 fresh oysters
  • 2 Coles Australian Qukes Baby Cucumbers, peeled into ribbons

Method

  1. Step 1

    Place chopped cucumber, lime rind, lime juice, ginger, sugar and fish sauce in a blender. Blend until smooth. Pour into a shallow metal container. Cover with foil. Freeze for 2 hours or until frozen. Use a metal spoon to break up cucumber mixture and place in a food processor. Process until finely crushed.
  2. Step 2

    Arrange rock salt on a serving platter. Top with the oysters. Spoon cucumber mixture over the oysters. Top with cucumber ribbons. Serve immediately.

    Serve with Lime wedges, spring onion curls and thinly sliced red chilli
