Pan-fried gnocchi with peas and crispy pancetta
Take your gnocchi up a notch with this delicious recipe. Complete with peas, crispy pancetta and parmesan, it will go down a treat.
- 2 tbs olive oil
- 500g pkt Coles Kitchen Potato Gnocchi
- 100g sliced pancetta, torn
- 1 cup (120g) frozen peas
- 1 1/4 cups (100g) finely grated parmesan
- 1 lemon, zested, juiced
- Mint leaves, to serve
Heat the oil in a large frying pan over high heat. Cook the gnocchi, in batches, turning occasionally, for 2-3 mins or until golden brown. Add the pancetta and cook for 2 mins or until crisp. Remove from heat.
Add the peas, parmesan and lemon juice to the gnocchi mixture in the pan and stir to combine. Season.
Divide the gnocchi mixture among serving bowls. Sprinkle with mint leaves and lemon zest to serve.
