Ingredients

  • 2 tbs olive oil
  • 500g pkt Coles Kitchen Potato Gnocchi
  • 100g sliced pancetta, torn
  • 1 cup (120g) frozen peas
  • 1 1/4 cups (100g) finely grated parmesan
  • 1 lemon, zested, juiced
  • Mint leaves, to serve

Method

  1. Step 1

    Heat the oil in a large frying pan over high heat. Cook the gnocchi, in batches, turning occasionally, for 2-3 mins or until golden brown. Add the pancetta and cook for 2 mins or until crisp. Remove from heat.
  2. Step 2

    Add the peas, parmesan and lemon juice to the gnocchi mixture in the pan and stir to combine. Season.
  3. Step 3

    Divide the gnocchi mixture among serving bowls. Sprinkle with mint leaves and lemon zest to serve.
