Passionfruit margaritas

Made with pink grapefruit juice and passionfruit pulp, these tropical margaritas are sure to be a hit. Serve with crushed ice for a refreshing sip.

Ingredients

  • 1 tbs raspberry jelly crystals
  • 1 lime wedge
  • 1 1/2 cups (375ml) chilled pink grapefruit juice
  • 1/4 cup (60ml) Malibu or coconut rum
  • 1/2 cup (125ml) tequila
  • 1/4 cup (60ml) orange-flavoured liqueur
  • 1/2 cup (125ml) fresh passionfruit pulp
  • 1 cup crushed ice

Method

STEP 1

Place the jelly crystals on a small plate. Run the lime wedge around the rim of each serving glass, then dip the glass rims in the jelly crystals to lightly coat.

STEP 2

Place the grapefruit juice, rum, tequila, orange liqueur, passionfruit pulp and ice in a large jug. Stir to combine. Pour evenly among the glasses and serve immediately.
