Pear and kale coleslaw with miso dressing

Ingredients

  • 1 bunch kale, trimmed, finely shredded
  • 1/2 red cabbage, finely shredded
  • 2 pears, cored, cut into matchsticks
  • 1/4 cup (50g) pistachios, toasted, chopped
  • 1 tbs sesame seeds, toasted
  • 1 tbs miso paste
  • 1 tbs salt-reduced soy sauce
  • 1 tbs Coles Pure Australian Honey
  • 1 tbs rice wine vinegar
  • 1 tsp sesame oil

Method

STEP 1

Combine the kale, cabbage, pear, pistachio and sesame seeds in a bowl.

STEP 2

Whisk the miso, soy sauce, honey, vinegar and oil in a small bowl. 

STEP 3

Drizzle half the dressing over the kale mixture. Gently toss to combine. Transfer to a serving bowl. Drizzle with the remaining dressing to serve.
