Pie maker bacon, zucchini and cheese scrolls

Ingredients

  • 3 sheets frozen puff pastry, just thawed
  • 1 large zucchini, coarsely grated
  • 1 small brown onion, finely chopped
  • 1 cup (100g) shredded pizza cheese
  • 400g Coles Streaky Bacon
  • 350g pkt Coles Kitchen Green Goddess Salad Kit
  • 1 avocado, stoned, peeled, chopped
  • 1 small red onion, thinly sliced

Method

  1. Step 1

    Preheat the pie maker. Cut each pastry sheet into quarters lengthways to make 12 even strips. Combine the zucchini, brown onion and cheese in a bowl. Cut half the bacon in half crossways. Arrange 11/2 pieces of bacon on each pastry strip. Spread the zucchini mixture evenly over the bacon. Starting from 1 short end, roll up 1 strip of pastry to enclose filling. Use a sharp knife to cut the scroll in half to make 2 scrolls. Repeat with the remaining pastry, bacon and zucchini mixture to make 24 scrolls.
  2. Step 2

    Place 4 scrolls in the pie maker and close the lid. Cook for 7-9 mins or until the scrolls are golden and puffed. Transfer to a plate and cover to keep warm. Repeat with the remaining scrolls.
  3. Step 3

    Meanwhile, prepare the salad in a large bowl following packet directions. Top with the avocado and red onion.
  4. Step 4

    Serve the scrolls warm or at room temperature with the salad.
