Prawns with mango salsa

Ingredients

  • 1 mango, stoned, peeled, finely chopped
  • 60g pkt Coles Australian Baby Rocket
  • 1 long red chilli, thinly sliced (optional)
  • 1 cup coriander sprigs
  • 600g pkt Coles Cooked Australian Tiger Prawns, peeled, deveined
  • Thousand island dressing, to serve
  • Lime wedges, to serve

Method

STEP 1

Combine the mango, rocket, chilli, if using, and coriander in a bowl. Season. 

STEP 2

Arrange the prawns on a serving platter. Serve with the mango salsa, dressing and lime wedges.
