Prawns with mango salsa
What's better than prawns and mango in summer? Not much! Enjoy our no-cook prawn and mango salsa to kick off your next get-together.
- 1 mango, stoned, peeled, finely chopped
- 60g pkt Coles Australian Baby Rocket
- 1 long red chilli, thinly sliced (optional)
- 1 cup coriander sprigs
- 600g pkt Coles Cooked Australian Tiger Prawns, peeled, deveined
- Thousand island dressing, to serve
- Lime wedges, to serve
Combine the mango, rocket, chilli, if using, and coriander in a bowl. Season.
Arrange the prawns on a serving platter. Serve with the mango salsa, dressing and lime wedges.
